    Sodexo is seeking an experienced Executive Pastry Chef to oversee high volume bakery production operation at Marquette University– one of Sodexo’s showcase accounts in Milwaukee, WI. The Executive Chef 2 (Executive Pastry Chef) will oversee Bakery operations that produces centrally for campus operations for overall quality of bakery products, producing high end catering and special event bakery items and developing new products for client and customers. As Manager, you will need to be hands on in training staff, managing production, including costing for labor and food costs, ordering, inventory, Continuously check the product presentations, use of proper recipes and portions of food/pastry to the specifications, Control inventory and ordering of food/pastries, cleaning equipment, cleaning supplies and utensils necessary for food/pastry production , implement ways to use leftover bread and pastry items, Maximize profitability through proper food/pastry and labor cost controls. 

    Product line includes: High end, Hand crafted pastries for large variety and high volume Resident Dining: artisan breads and muffins, bagels, cakes, pies, bakery bars, donuts, cookies, as well as for catering and retail operations. This manager will be responsible for overseeing 28 employees, Will require flexibility with schedule – based on bakery schedule.


    The ideal candidate will have:

    • High volume bakery production management experience.
    • Culinary background in high end bakery: hand crafted pastries, baking and catering.
    • Prefer 2+ years’ prior supervisory skills and hotel/resort culinary/or volume bakery operations experience preferred.
    • Will have a functional knowledge and competence regarding sustainability practices in a food service operations.

    Position Summary

    Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
    Key Duties
    - Implements & coordinates the culinary function. 
    - Directs & trains cooks & utility workers.
    - Ensures food preparation & production meets operational standards.
    - Manages catering & retail areas.
    - Customer & Client satisfaction.
    - Financial management to include food cost & labor management.
    -  Manages food & physical safety programs.


    Qualifications & Requirements

    Basic Education Requirement - Associate's Degree 
    Basic Management Experience - 2 years
    Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
