    Sodexo is seeking an experienced and accomplished Executive Chef who is creative and imaginative, with a discriminatory eye for detail and a passion for food to join our team located in historic Fredericksburg, VA at the University of Mary Washington.

     

    The Executive Chef will be responsible for all aspects of the culinary operation serving 3,000 student boarders and 15,000 meals weekly. The chef will be accountable for creative menu development, product costs, flawless execution and will provide a high level of customer service to our clients; must also be capable of motivating, training and developing the culinary team. This position requires excellent communication and organizational skills, a high degree of accountability and strong interpersonal skills.  Position has culinary oversight for the residential dining program and catering.

     

    We are seeking candidates with the following in their culinary toolkits:

     

    Culinary Creativity: Follows culinary trends and innovates using local sustainable food sources, is able to translate ideas into unique menu and recipe programs that advance the culinary experience for our customers.  

     

    Leadership: Ability to effectively communicate to sous chefs, key personnel and management team along with a passion and dedication to be “one of the best”.  Must be highly engaged and extremely hands-on in day to day operations.

     

    Training: Must be able to articulate and demonstrate a wide ranging variety of cooking techniques and skills for the unit staff (plate presentation, quality, safety, proper culinary techniques).

     

    Financial: Ability to show proven results with food costs, labor and controllable expenses.

    Position Summary

    Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training.  Works directly with internal and external clients managing the catering process from beginning through execution. 
    Key Duties
    - Implements & coordinates the culinary function. 
    - Directs & trains cooks & utility workers.
    - Ensures food preparation & production meets operational standards.
    - Manages catering & retail areas.
    - Customer & Client satisfaction.
    - Financial management to include food cost & labor management.
    -  Manages food & physical safety programs.

     

    Qualifications & Requirements

    Basic Education Requirement - Associate's Degree 
    Basic Management Experience - 2 years
    Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
